Pesto Burrata Caprese

This delicious and colourful brunch or lunch dish will soon become a favourite! Make it vegetarian by omitting the prosciutto.

Ingredients

  • 1 thick slice of Brumby’s Authentic Sourdough

  • 1 tsp store-bought garlic butter

  • 1 tsp butter

  • 5 diced cherry tomatoes

  • 1 tsp olive oil

  • Salt and pepper to taste

  • 3 slices of prosciutto

  • 1 ball of burrata

  • 1/2 tbsp pesto

  • a drizzle of balsamic glaze

  • 4 -5 fresh basil leaves

Instructions

  1. In a small bowl add the cherry tomatoes, and toss with olive oil, plus salt and pepper.

  2. Add the butter to a pan over medium heat, then add the sourdough, toasting each side until golden.

  3. Once the bread is toasted, spread the garlic butter over the toasted sourdough.

  4. Then add prosciutto, and crack open the burrata on top of the bread. Smother with pesto then add your tomato mix, balsamic glaze and garnish with basil.

  5. Your first bite will transport you to sandwich heaven!
