Protein Packed Creamy Chicken Sandwich

Made with our Mega Protein loaf, this sandwich will deliver a protein punch to your day. Add extra salad vegetables if desired.

Ingredients

  • 2 slices of Brumby’s Mega Protein bread

  • 200g chicken breast poached, finely chopped

  • 1 tbsp of mayonnaise

  • 3 tbsp of Greek yoghurt

  • 1 stick of celery, finely diced

  • A small handful of fresh chives, finely chopped

  • 2 pickles, finely diced

  • 1 tsp curry powder

  • 1 tsp brown sugar

  • A Small handful of bean spouts

  • 1/2 thinly sliced Lebanese cucumber

  • Salt and pepper to taste

Instructions

  1. Poach your chicken breast for 10-12 minutes over a very low peat, or until the juices run clear when pierced in the thickest part.

  2. In a medium bowl, add the chopped chicken, mayo, greek yoghurt, celery, chives, pickles, curry powder, sugar salt and pepper and mix well to combine.

  3. Place the creamy chicken mix on top of one slice of bread, then add the cucumber and bean sprouts. Lastly, add the second slice and enjoy the tastiest way to get your protein in for the day.
