Vegetarian Swiss Soy & Linseed Sandwich

A simple lunch idea that provides an excellent source of fibre and a good source of protein. Add meat of choice if desired. We added tuna!

Ingredients

  • 2 slices Brumby’s Swiss Soy and Linseed bread (or bread of choice)

  • 2 tbs canned sweet corn

  • 60g cottage cheese

  • 10g spinach leaves

  • Salt and pepper

Instructions

  1. Combine all ingredients and place between 2 slices of Brumby’s Swiss Soy and Linseed Loaf

  2. Enjoy!
