Vegetarian Friendly Mozzarella Schnitzel
Each bite of this delectable, warm, stretchy dish creates a sensation of flavours and textures. Served alongside a zesty side salad, it's a true delight for vegetarians and non-vegetarians!

Ingredients
1 mozzarella ball (cut into thick slices)
1 tsp rosemary
1 tsp dried parsley
Olive oil to drizzle
Salt and pepper to taste
2 tbsp plain flour
1 egg
1/4 cup canola oil (for frying)
Instructions
Preheat your oven to 200 degrees celsius.
To make the breadcrumbs, tear the loaf into roughly 2 x 2 cm pieces. Place on a baking tray and drizzle with olive oil, parsley, rosemary, plus salt and pepper.
Bake for 15 minutes, or until crisp to the touch.
Blitz the bread in in a food processor or bullet until they resemble bread crumbs, then return to the baking tray. Bake for a further 10 minutes, or until just before they turn golden.
Prepare 3 separate bowls, in the first bowl add the flour, in the second bowl add egg and give a quick whisk, and in the third bowl, add the blitzed bread crumbs.
Dip the mozzarella slices in each bowl, one at a time, starting with the flour, then the egg and lastly, with the bread crumbs. Make sure to coat thoroughly during this process.
Over a medium heat, add the oil to a fry pan, let the pan get hot, then add your coated mozzarella. Cook for 2-3 minutes each side or until golden.
