The Besto-Pesto Eggs
Are your eggs the besto? Level up the common fried egg with a bit of basil pesto for the besto eggs in town!

Ingredients
2 thick slices Brumby’s Rosemary & Garlic Pana de Casa
2 tbsp pesto
2 eggs
pinch of kosher salt
pinch of ground black pepper
pinch of red pepper flakes
100g marinated goats cheese
Instructions
Slice the loaf into thick slices.
Place the goats cheese into a bowl and whip into a smooth consistency.
Heat a medium frying pan over medium heat. Once warm, spread the pesto in a thin layer across the pan.
When the pesto is warm, crack the eggs over the pesto.
Sprinkle with salt, pepper, and red pepper flakes. Cook the eggs for 4 to 5 minutes or until the egg whites are set and no longer translucent.
Meanwhile, toast the bread and spread on the goats cheese.
Remove the eggs from the pan and place them top of the toast.
Serve immediately and enjoy!
