Steak Sandwich with Chimichurri

This chimichurri steak sandwich recipe is a leveled-up version of a traditional steak sandwich. Up the chili for an additional kick if you love heat!

Ingredients

  • 1 Brumby’s Ciabatta

  • 1 large white onion, sliced

  • 1 tbsp olive oil

  • 1 tsp brown sugar

  • 1 tbsp mayonnaise

  • 1 tsp dijonnaise

  • Fresh lettuce leaves of choice

  • 200g thick cut of steak

  • 1 tbsp Butter

  • 1 twig of rosemary

  • 1 garlic clove

  • 2 slices of cheese of choice

  • A handful of fresh chopped chives

Instructions

  1. Preheat your oven to 200 degrees Celsius.

  2. To make the caramelised onions: In a frypan over medium/low heat, sauté the onion in olive oil. Stir frequently and allow to reduce for 30 minutes. About half way through mix in the brown sugar.

  3. To make the sauce: Mix together the mayonnaise and whole grain mustard.

  4. To make the chimichurri: Mix together all the ingredients listed in a medium bowl.

  5. To cook the steak: Season both sides of the steak with salt and pepper. In a heavy fry pan on high heat, add the oil, butter, rosemary, and garlic. Then add the steak and cook 2 minutes each side.
