Fancy Schmancy Mac N Cheesy
If Mac n' Cheese is a favourite in your house, add a little bit of a twist to the classic recipe with a few extra ingredients such as Monterey Jack Cheese and a crunchy breadcrumb topping.

Ingredients
Breadcrumb Topping
1 tsp butter (melted)
1/2 tbsp olive oil
1/4 tsp garlic minced
Pinch Salt
Mac N Cheese
1 cup macaroni elbows
4 cups cold water
1 egg
1/2 cup milk
200g cheddar cheese
200g Monterey Jack cheese
1 tsp garlic powder
1/2 tsp mustard powder
4 tbsp cold butter
Instructions
For the Breadcrumb Topping
Preheat oven to 200 degrees celsius.
Slice the High Fibre Low GI loaf into thin pieces, then bake for 15 minutes or until crisp to the touch.
Pulse the bread slices in a food processor or a bullet until it forms bread crumbs.
Place the butter in a bowl and place in the microwave for 30 seconds until melted. Then add the oil, garlic, a pinch of salt and the bread crumbs. Mix well, and pour the mixture into a baking tray then bake for 8 minutes. Set aside.
For the Mac n Cheese
Once the pasta cooked, pour through a strainer to remove excess water. Return pasta to the pot on the stove top. On a low heat and add the milk and egg mixture to the pot, stirring constantly for 30 seconds.
Add the cheese, garlic powder, and the mustard powder and continue stirring. Then add the cold butter, mix in well, then remove the pan from the heat.
Pour the pasta mixture into serving bowl and cover with the bread crumb topping prepared earlier. Add finely chopped chives on top, and serve hot.
