Crispy Crunchy Croissant Ice-Cream Sandwich

Just because it's winter, it doesn't mean that we can't have ice-cream! Pair our legendary croissant with your fave icecream for a delightfully crunchy dessert or midnight snack :).

Ingredients

  • 2 x Brumby's Croissants

  • 1 tbsp butter or oil

  • Honey or golden syrup to taste

  • 1 tsp brown sugar

  • 2 large scoops of your favourite ice-cream

  • Icing sugar to sprinkle (optional)

Instructions

  1. Working with one croissant at a time, flatten each croissant with a rolling pin.

  2. Preheat a large, non-stick pan over medium-high heat. Add the butter and swirl it around to coat the bottom of the pan.

  3. Add the flattened croissants to the pan and cover them with a sheet of parchment paper and cook the croissants for 1 to 2 minutes. Check the bottom for toasti-ness.

  4. Drizzle a little honey or golden syrup on each croissant and then sprinkle with sugar. Then, flip the croissants like a pancake, cook the second side for an additional 1 to 2 minutes, until caramelised and crispy.

  5. Remove the croissants from the pan, taking a moment to admire your sugary, glazed creation.

  6. Allow the croissants to cool slightly. Place two scoops of ice-cream to one of the croissants, and then place the second croissant on top of the ice-cream. Be sure to use the ice cream straight out of the freezer so it will maintain its form for as long as possible.

  7. Lightly dust with icing sugar.
