Seriously Cheesy Left Over Roast Beef Sandwich

Who doesn't love a roast? And better still, who can resist raiding the fridge to repurpose any leftovers? Our deliciously cheesy left over roast beef sandwich will hit the spot.

Ingredients

  • 4 slices Brumby's Sandwich White Loaf (thick cut)

  • 4 large slice left over roast beef

  • 6 slices provolone cheese

  • 2 handfuls rocket

  • 1 red onion (thinly sliced)

  • 1 tbsp oil

  • 1 tbsp butter

  • 1/2 tbsp brown sugar

  • 1 tbsp balsamic vinegar

  • 1 tsp mayonnaise

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • Salt and pepper to taste

Instructions

  1. To make the sauce: In a small bowl add the mayo, Dijon mustard, honey, and a sprinkle of salt and pepper. Mix until combined.

  2. To make the chutney: Place a medium sized pan, over low-medium heat and add the oil. Once the oil has heated, add the sliced onion and cook until the onion starts to soften. about 6-8 minutes.

  3. Add brown sugar and balsamic vinegar to the pan, stirring constantly.

  4. Continue to cook the onions down for a further 8 minutes, or until onions have browned are almost sticky. Set aside.

  5. Then, place 2 slices of bread side by side on a plate, and cover with the sauce.

  6. Add 2 slices of roast beef on each of the slices of the bread, then add the rocket, cheese, chutney, and lastly top both of these with the the other slices of bread to form two sandwiches.

  7. Next, we fry! In a medium pan over medium heat, add the butter. Once the butter has melted and is bubbling, add the sandwiches to the pan. Cook for 5 minutes, or until golden on one side. Add a lid to the pan to help the cheese melt, then flip and cook the other side for a further 4 minutes.

  8. Cut each sandwich in half and enjoy!
