Chicken Salad Sandwich

Made with Brumby's High Fibre Low GI loaf, this delicious sandwich will go down a treat! Add sliced cheese and other veges such as carrot and cucumber for a filing sandwich.

Ingredients

  • 2 slices of Brumby's High Fibre LOW GI Loaf

  • 3 cups cooked chicken, finely chopped

  • 4 spring onions, chopped finely

  • 3 stalks celery, leaf ends cut off and stalks finely chopped

  • 1/2 cup mayonnaise

  • 1/3 cup sour cream

  • 1 sliced tomato

  • 1/2 cup baby spinach leaves

  • Salt and pepper

Instructions

  1. Put chicken, onion, celery, mayonnaise and sour cream into a large bowl, mix the ingredients together with a spoon.

  2. Spread the chicken mixture thickly over the Brumby’s High Fibre, Low GI bread and top with sliced tomato and baby spinach leaves

  3. Salt and pepper to taste

  4. Serve and enjoy!
