Cheese and Bacon Pizza Pocket

Ingredients

  • Brumby’s Cheese and Bacon Rolls

  • 1/2 onion, diced

  • 2 garlic cloves, diced

  • 75g diced bacon

  • 1/2 chorizo, diced

  • 4 cup mushrooms, diced

  • 200g mozzarella, sliced

  • Handful basil + basil to garnish

  • 1 tbs olive oil

  • Sauce: 200g pizza sauce, 2 garlic, diced, handful basil, diced

Instructions

  1. Pre-heat oven to 180 degrees

  2. In a pan on medium heat, add 1/2 Tbs of olive oil then add onion, once softened add bacon cook for 2 minutes then add chorizo, garlic, mushrooms and basil. Cook for another 5- 6 minutes. Remove from heat.

  3. To make the sauce: Add 1/2 tbs olive oil to a saucepan over medium heat, then add the garlic cook for 30 seconds then add the pizza sauce and the basil, stir and then cook for another 6 minutes on low heat.

  4. Cut a 2m slit on the sides of the cheese and bacon rolls, then use your hands to remove any excess white bread inside, be careful not to tear the bread open.

  5. Divided evenly between both, stuff the rolls with your bacon mixture, then stuff them with your mozzarella slices, leave 6 slices for the tops of the buns, then use a piping bag to pipe in the sauce, leave enough sauce to lightly cover the tops of the buns, then top divided evenly

  6. Cook in the oven for 15 minutes, buns should be crispy on the outside and cheese melted and partially browned.

  7. Garnish with basil and enjoy!
