BBQ Sausage Rolls with Balsamic Onions
Much tastier than a classic sausage and white bread, this BBQ beauty will have the family queuing up for more! Use your favourite sausages for a dish that's sure to please.

Ingredients
2 tablespoons Olive Oil
6 thin beef sausages sliced into 2 inch pieces
2 medium brown onions, cut into slices
2 cloves garlic finely chopped
2 capsicums (1 red, 1 green) cut into medium slices
1 1/2 teaspoons Dijon mustard
200 grams grated cheese
Instructions
Heat 1 tablespoon of olive oil on the BBQ over medium heat. Add sausages and cook until golden brown, turning once. Remove from BBQ and set aside. Slice diagonally.
Heat a large frypan to medium heat and add remaining oil. Add onions and cook until lightly browned and soft. Add balsamic vinegar and cook until liquid has evaporated. Add garlic and capsicum and cook for another 5-7 minutes, or until softened. Season to taste. Stir in the sausages.
Slice each roll down the centre and spread one half of each with 1/4 teaspoon mustard. Divide the cheese between the rolls and sprinkle on the side with the mustard. Place under preheated grill for a few minutes just to slightly toast roll and melt the cheese.
Remove the rolls from the oven and fill each one with the sausage and onion mixture. Slice in half and serve.
