Apricot Loaf w/ Cinnamon Butter and Candied Walnuts

Ingredients

  • 1 x Brumby’s Aegean Apricot Loaf

  • 1 Tbs butter

  • Icing sugar (optional garnish)

  • Cinnamon Butter:

    • 150g salted butter (room temperature)

    • 1 Tbs honey

    • 3 Tbs cinnamon sugar

  • Candied Walnuts:

    • 1/2 cup crumbled walnuts

    • 1 Tbs brown sugar

    • 1 Tbs Butter

Instructions

  1. Cinnamon Butter: In a medium bowl combine the room temperature butter, honey and cinnamon sugar in a bowl. Mash together with a fork until smooth and creamy. Set aside

  2. Candied walnuts: In a medium pan over medium-low heat add 1 tbs of butter once almost melted add the walnuts and brown sugar, and cook for 5 minutes stirring constantly, you will notice the walnuts will start to brown once this happens remove from heat and let cook off the heat for 1 minute.

  3. Apricot Loaf: Put that same pan onto medium heat, add a tbs of butter once melted and butter has mixed in with leftover liquid from the walnuts add your apricot loaf slices in batches cook for roughly 2 minutes each side or until golden brown.

  4. To Assemble: Spread a generous amount of cinnamon butter over your hot sliced of the pan-fried apricot loaf, then sprinkle with candied walnut and dust with icing sugar (optional) and enjoy hot!
