Ingredients:

1 x Brumby’s White Sandwich Loaf

5 Tbs butter
-
9 peaches, deseed and finely sliced
-
2 apples, cored and finely sliced

Juice of half a lemon
-
1/3 cup caster sugar
-
600ml thickened cream
-
1 Tbs honey
-
1 x Tbs beetroot powder or a drop of pink food colouring
-
Serve with vanilla icecream and edible flowers (optional)
Method:

Step 1:
Pre-heat oven to 180 degrees

Step 2:
Put peaches, apples and sugar in a large bowl and toss together. Leave for 40 minutes to macerate, which is a fancy word for letting the peaches and apples sweat and release their juices.

Step 3:
Make your crumb by cutting your loaf into small cubes, then bake in the oven for 5 minutes to crisp up the bread

Step 4:
Add your bread and 4 Tbs of butter to a food processor and blitz until a fine crumb forms

Step 5:
Over medium heat, in a large saucepan melt 1 Tbs of butter, add your peaches and apple mixture and your lemon juice to the pan and let the fruit soften and the juices thicken about 5 – 6 minutes

Step 6:
Grease a large oven proof dish and pour in your peach and apple mixture, then layer your crumbs on top, use your hand to lightly press, making sure it's even all the way around.

Step 7:
Place in the oven and bake for 20 minutes or until crumb is golden brown

Step 8:
While the crumble is baking make your whipped cream by adding the cream, beetroot powder or food colouring and honey to a bowl, then whisk with an electric whisk for 2-3 minutes or by hand for around 6- 9 minutes, or until peaks start to form

Once the crumble is finished baking, remove it from the oven and serve hot with a big scoop of your pink honey whipped cream and a scoop of vanilla ice cream.
