Ingredients:

2 slices Brumby’s multigrain bread, toasted, cut into ‘soldiers’

4 eggs

1/4 cup skim milk

3 teaspoons basil pesto

100g 97% fat-free shaved ham
Method:

Step 1:
Place eggs, milk and pesto in a large microwave-safe bowl.

Step 2:
Whisk ingredients with a fork, until well combined. Place in microwave and cook on HIGH for 30 seconds. Remove bowl. Stir. Return to microwave and cook for another 30 seconds. Stir. Repeat 1–2 more times or until scrambled eggs are soft and moist.

Step 3:
Spoon eggs onto 2 serving plates with slices of ham and toast ‘soldiers’. Serve immediately.
