Ingredients:

2 slices of Brumby’s White Sandwich Loaf (or Brumby's Mega Protein Loaf)

1 tbsp butter
-
3 eggs, beaten

3 slices streaky bacon
-
a small handful grated cheddar cheese
-
salt and pepper to taste
-
tomato sauce for dipping (optional)
Method:

Step 1:
Cook bacon to your desired level and set it aside.

Step 2:
Place the butter into a small non-stick frying pan and heat over medium heat until the butter is melted.

Step 3:
Whisk the eggs in a separate bowl and pour over the butter. Cook the eggs in a frying pan until they are almost done.

Step 4:
Place the two slices of bread on top of the eggs and press the bread into the eggs.

Step 5:
Carefully flip the bread and eggs over, and then fold any overlapping egg onto the bread slices.

Step 6:
Top the eggs with shredded cheese and the cooked bacon.

Step 7:
Then cook for a minute or two, until the bread is toasted on the top and the bottom.

Serve immediately while still hot.
