Chipotle Chicken Baguette

Ingredients:

  • 1 Brumby’s White French Stick

  • 1 medium chicken breast (250g), thinly sliced

  • 1/2 brown onion, sliced

  • 1 poblano chilli, finely sliced

  • ¼ cup smoked cheddar, grated

  • 1/3 cup mozzarella, grated

  • ½ tsp chilli powder

  • 1/3 cup chipotle in adobo minced

  • ½ tsp Garlic powder

  • ½ lime zest

  • Handful pickled onion

  • Handful coriander

  • 3 Tbs butter

Method:

  • Step 1:

    Pre Heat the oven to 180 Degrees and melt 2 tbs of butter in the microwave for about 30 seconds.

  • Step 2:

    Then pour the butter mixture over the bread stick and bake in the oven for 5 minutes or until golden brown on top.

  • Step 3:

    Heat 1 Tbs of butter in a pan over medium-high heat, add your chicken, and onion, cook for 5 minutes then add the poblano chilli, cook for a further 1 minute then add in garlic powder, chilli powder, chipotle, lime zest and mix.

  • Step 4:

    Add both the cheeses on top of the chicken mixture and allow to melt.

  • Step 5:

    Cut your bread in half and open through the middle, use a spatula to scoop the chicken mixture onto the base of the French stick, and then top with coriander and pickled onions. And enjoy your first bite!
