Ingredients:

1 x Brumby’s Supreme Choppa Loaf

½ large capsicum, sliced
-
3 large slices of eggplant
-
1 medium zucchini, sliced
-
½ red onion, thinly sliced
-
50g cheddar, grated
-
10 x bocconcini, halved
-
10 pitted marinated green olives, halved
-
9 slices of sopressa hot salami

2 cups vegetable oil
Method:

Step 1:
Pre-heat oven to 200 degrees

Step 2:
Over high heat in a large deep pan or wok add your oil, once the oil is hot, shallow fry your eggplant for one and half minutes on one side, then flip and cook for another one and half minutes on the other side, remove from the oil with tongs and place on a plate lined with a paper
towel, repeat this step with your zucchini shallow fry for one and half minutes then flip and fry for another one and half minutes, and place on a paper towel, then shallow fry your capsicum and onion together for 2 minutes and place on paper towel. Pat dry all the vegetables with a paper
and set aside.

Step 3:
Slice your supreme chopper loaf in half and layer with your sopressa, then layer with the eggplant, zucchini, capsicum and onion, then top with grated cheddar, bocconcini and olives.

Step 4:
Add the lid back on top and bake in the oven for 12 minutes or until the cheese is melted and the loaf is golden brown and crispy

Slice up into bite-size pieces and that’s Amóre!
