Ingredients:

1 x Brumby’s Aegean Apricot Loaf, (sliced into 7-8 thick pieces, including end pieces.)

1 Tbs butter

Icing sugar (optional garnish)

Cinnamon Butter: 150g salted butter (room temperature), 1 Tbs honey, 3 Tbs cinnamon sugar

Candied Walnuts:1/2 cup crumbled walnuts, 1 Tbs brown sugar, 1 Tbs Butter
Method:

Step 1:
Cinnamon Butter: In a medium bowl combine the room temperature butter, honey and cinnamon sugar in a bowl. Mash together with a fork until smooth and creamy. Set aside

Step 2:
Candied walnuts: In a medium pan over medium-low heat add 1 tbs of butter once almost melted add the walnuts and brown sugar, and cook for 5 minutes stirring constantly, you will notice the walnuts will start to brown once this happens remove from heat and let cook off the heat for 1 minute.
Pour your walnuts into a bowl, leaving the liquid in the pan.

Apricot Loaf: Put that same pan onto medium heat, add a tbs of butter once melted and butter has mixed in with leftover liquid from the walnuts add your apricot loaf slices in batches cook for roughly 2 minutes each side or until golden brown.

To Assemble: Spread a generous amount of cinnamon butter over your hot sliced of the pan-fried apricot loaf, then sprinkle with candied walnut and dust with icing sugar (optional) and enjoy hot!
