Ingredients:

1 Brumby’s Ciabatta

1 large white onion, sliced

1 tbsp olive oil

1 tsp brown sugar

1 tbsp mayonnaise

1 tsp dijonnaise

Fresh lettuce leaves of choice

200g thick cut of steak

1 tbsp Butter
-
1 twig of rosemary
-
1 garlic clove
-
2 slices of cheese of choice

A handful of fresh chopped chives
Method:

Step 1:
Preheat your oven to 200 degrees Celsius.

Step 2:
To make the caramelised onions: In a frypan over medium/low heat, sauté the onion in olive oil. Stir frequently and allow to reduce for 30 minutes. About half way through mix in the brown sugar.

Step 3:
To make the sauce: Mix together the mayonnaise and whole grain mustard.

Step 4:
To make the chimichurri: Mix together all the ingredients listed in a medium bowl.

To cook the steak: Season both sides of the steak with salt and pepper. In a heavy fry pan on high heat, add the oil, butter, rosemary, and garlic. Then add the steak and cook 2 minutes each side.
