Ingredients:

3 Brumby’s Blueberry and Custard Glens

1 litre of milk (of choice)

4 large eggs + 4 egg yolks

1/2 cup granulated sugar

1 tsp vanilla extract

Icing sugar & blueberries to finish!

Pre-made Butterscotch Sauce and ice cream to serve (optional)
Method:

Step 1:
Preheat the oven to 180 degrees celsius.

Step 2:
Slice the Glens into 1-inch cubes, then spread them out, in a greased 9'x13' rectangular baking dish.

Step 3:
In a large mixing bowl, bring together milk, eggs, egg yolks, sugar, and vanilla extract. Whisk to combine.

Step 4:
Pour the egg mixture into the baking dish with the chopped Glens. Let it sit for 15 minutes.

Step 5:
After this, bake for 60-70 minutes, or until the centre is fully cooked. If the top is too browned at any time, cover with tinfoil.

Step 6:
Remove from oven and let it sit for 5 minutes.

Step 7:
Sprinkle with icing sugar and blueberries. Best served with warm butterscotch sauce and ice cream (optional).
