Ingredients:

2 slices Brumby’s Ciabatta

1 TBS butter

6 cherry tomatoes, diced

1 small cucumber, diced

1/2 avocado

Premade pickled red onion

kalamata olives, diced
-
handful of rocket

1 x Tbs fetta
-
2 drizzles of balsamic glaze

4 drizzles of lemon-infused olive oil

Sprinkle of chilli flakes

Salt + Pepper
Method:

Step 1:
Melt butter in a pan over medium heat. Once butter is melted add the slices of ciabatta to the pan, make sure to soak up all the butter on both sides. Cook until lightly browned.

Step 2:
Drizzle the ciabatta with the lemon-infused olive oil and then assemble the rest of the ingredients on top finishing with a drizzle of the balsamic glaze, sprinkle of salt, chilli flakes and cracked pepper.
