Chicken Salad Sandwich

Ingredients:

  • 2 slices of Brumby's High Fibre LOW GI Loaf

  • 3 cups cooked chicken, finely chopped

  • 4 spring onions, chopped finely

  • 3 stalks celery, leaf ends cut off and stalks finely chopped

  • 1/2 cup mayonnaise

  • 1/3 cup sour cream

  • 1 sliced tomato

  • 1/2 cup baby spinach leaves

  • Salt and pepper

Method:

  • Step 1:

    Put chicken, onion, celery, mayonnaise and sour cream into a large bowl, mix the ingredients together with a spoon.

  • Step 2:

    Spread the chicken mixture thickly over the Brumby’s High Fibre, Low GI bread and top with sliced tomato and baby spinach leaves

  • Step 3:

    Salt and pepper to taste

  • Step 4:

    Serve and enjoy!
