Serve this classic Italian antipasto favourite for friends who drop in this festive season.  A sweet combination of delicious bread, tomato, red onion and more. Although it may seem like just a slice of garnished bread, it is actually one of the most flavourful, enjoyable dishes in the Italian repertoire. Simply perfect bread magic!

Ingredients

8 x 1cm thick slices Brumby’s Pane di Casa

4 vine ripened tomatoes, chopped

2 garlic cloves, crushed

1 tablespoon finely chopped red onion

2 tablespoons finely chopped basil

1 long red chili finely chopped (optional)

1/4 cup olive oil

Method

1. Place the tomato, crushed garlic, onion, chopped basil, chilli and 1 tbsp of the oil in a bowl. Season and toss to combine. Set aside for 15 mins to marinate.

2. Meanwhile, heat a barbecue grill or chargrill on medium-high. Brush both sides of bread with remaining oil. Cook on grill for 2-3 mins each side or until toasted.

3. Rub the cut side of the garlic halves over 1 side of the toast. Top with tomato mixture and basil leaves. Serve immediately.
